Marshall Paulsen has been in the restaurant industry for over 20 years and is currently the Director of Operations for Vinai. Recording outside at the State Fair grounds, Marshall talks about the Minnesota Farmers Union and their presence at the State Fair. He tells Yia and David about his career in the restaurant industry, his vision for developing leadership in the kitchen, and some of the changes he sees in restaurants post-COVID.
